Mediterranean Tuna Salad Lettuce Wrap

Ingredients
2 cans solid white albacore tuna in water, drained
1 15oz can chick peas, drained and rinsed
½ cup red onion, chopped
2 stalks celery, diced
¼ cup sundried tomatoes, chopped
¼ cup Kalamata olives, chopped
½ cup parsley, roughly chopped
2 T red wine vinegar
2 T olive oil
1 T lemon
1 tsp Dijon mustard
Fresh ground black pepper, to taste
Bibb lettuce leaves for the “wrap”
Directions
- In a large bowl, combine tuna, chick peas, onion, celery, sundried tomatoes, olives, and parsley.
- In a separate bowl, whisk together red wine vinegar, olive oil, lemon, and Dijon mustard until well combined.
- Toss vinaigrette into tuna mixture and season with fresh pepper to taste.
- Spoon tuna mix into Bibb lettuce, fold over, and enjoy!
