Bromelain is an enzyme found in pineapple that helps break down protein. The pineapple core actually contains higher levels of this enzyme, but due to its stringy tough texture and less sweet taste, it’s often discarded. This recipe utilizes the core to maximize your bromelain intake and reap all the benefits it has to offer! -Genevieve

Ingredients

  • 2 ½ cups fresh pineapple, diced (about ½ a large pineapple) – core reserved
  • 1 cup red onion, chopped
  • 1 ½ cups cherry tomatoes, chopped
  • 1 orange bell pepper, chopped
  • ½ a jalapeno, chopped with seeds reserved (If you can handle the heat! Discard for a mild version)
  • ¼ cup cilantro, chopped
  • Core of pineapple, chopped into chunks
  • ½ inch ginger, peeled
  • 1 lime

Directions

  1. Combine pineapple, red onion, tomatoes, bell pepper, jalapeno, and cilantro in large bowl.
  2. In a food processor, combine pineapple core, ginger and juice from lime until smooth.
  3. Add pineapple core mixture to other ingredients.
  4. Toss and season to taste.
  5. Serve with tortilla chips or as an accompaniment to your favorite entrée. I served myself a heaping scoop on blackened shrimp tacos!
